Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract until combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until edges are lightly golden. Cool completely on a wire rack.
- For the frosting, beat together powdered sugar, butter, lemon juice, and lemon zest until smooth and creamy.
- Frost cooled cookies with the lemon frosting. Allow frosting to set before storing.

- Chill dough for 20 minutes before baking for thicker cookies.
