- 1.5 lbs ground beef (80/20 blend recommended)
- 2 yellow onions, thinly sliced
- 1 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt (plus more to taste)
- 1/4 tsp black pepper
- 1 tsp Worcestershire sauce
- 1 garlic clove, minced
- 1 cup shredded Gruyère or Swiss cheese
- 4 hamburger buns
- Optional: Dijon mustard, arugula, mayonnaise, extra cheese, or additional caramelized onions for topping
Instructions
- In a skillet, heat olive oil and butter over medium-low heat. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for 25–30 minutes until golden and caramelized. Stir in garlic and Worcestershire sauce during the last few minutes. Set aside to cool.
- Divide ground beef into 8 equal portions. Flatten each into a thin round.
- Spoon cooled caramelized onions and cheese onto the center of 4 beef rounds. Top with the remaining 4 rounds and seal edges tightly. Season with salt and pepper.
- Grill or pan-sear burgers over medium-high heat for 4–5 minutes per side, or until cooked through and cheese is melted. Avoid flipping more than once.
- Toast buns, then assemble burgers with your favorite toppings and condiments.

- Use blue cheese, cheddar, or provolone for different flavor profiles.
- Add sautéed mushrooms to the onion mix for extra umami.
- Chill stuffed patties before cooking to help seal in the filling.
