Description

Fluffy Pancakes are soft, thick, and airy pancakes made from scratch with simple ingredients. They’re perfect for a cozy breakfast and taste amazing with syrup, fruit, or butter.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • Butter or oil for greasing the skillet
  • Optional toppings: maple syrup, fresh berries, whipped cream

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter will be slightly lumpy.
  4. Let the batter rest for 5 minutes while preheating a non-stick skillet or griddle over medium heat.
  5. Lightly grease the skillet with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
  8. Flip and cook the other side for 1–2 minutes until golden brown and cooked through.
  9. Serve warm with desired toppings.

Notes

  • Letting the batter rest helps produce fluffier pancakes.
  • A dash of vanilla extract or cinnamon can enhance flavor.
  • Leftover pancakes can be refrigerated or frozen and reheated later.
