- 1 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract (optional)
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract if using.
- Pour wet ingredients into dry ingredients and mix just until combined. Batter may be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes.
- Flip and cook for another 1–2 minutes or until golden brown and cooked through.
- Serve warm with syrup, fruit, or desired toppings.
Notes
- Do not overmix the batter to keep pancakes fluffy.
- Add blueberries, chocolate chips, or bananas for variety.
- Keep pancakes warm in a low oven if making a large batch.
