- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp vinegar or lemon juice

Instructions
- Peel the hard-boiled eggs and slice each in half lengthwise.
- Carefully remove the yolks and place them in a medium bowl.
- Mash the yolks with a fork until finely crumbled.
- Add mayonnaise, Dijon mustard, and vinegar or lemon juice. Mix until smooth and creamy.
- Season with salt and black pepper to taste.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Sprinkle with paprika and garnish with chopped chives.
- Chill in the refrigerator until ready to serve.
