For the Eggplant:

  • 2 large eggplants, sliced into 1/2-inch rounds
  • 1 tsp salt (for sweating the eggplant)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

For Assembly:

  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

Prepare the Eggplant:

  1. Sweat the Eggplant – Sprinkle salt over eggplant slices and let them sit for 30 minutes to draw out moisture. Pat dry with paper towels.
  2. Set Up Coating Stations – Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, Italian seasoning, and black pepper in a third.
  3. Coat the Eggplant – Dip each eggplant slice in flour, then egg, then breadcrumb mixture, ensuring even coverage.

Fry the Eggplant:

  1. Heat Oil – In a deep pan, heat vegetable oil to 350°F (175°C).
  2. Fry – Fry eggplant slices for 2-3 minutes per side, until golden brown. Drain on paper towels.

Assemble & Bake:

  1. Preheat Oven – Set to 375°F (190°C).
  2. Layer the Dish – In a baking dish, spread ½ cup marinara sauce, add a layer of fried eggplant, sprinkle with mozzarella and Parmesan, and repeat layers until all ingredients are used.
  3. Bake – Bake for 20-25 minutes until the cheese is melted and bubbly.
  4. Garnish & Serve – Sprinkle with fresh basil and serve hot!

Notes

  • For a healthier version, bake the breaded eggplant at 400°F for 20 minutes instead of frying.
