- 2 lobster tails, cooked and chopped
- 2 tbsp butter
- 1 small onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1/4 cup all-purpose flour
- 3 cups seafood or chicken broth
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped
Instructions
- In a large pot, melt butter over medium heat. Add onion, carrot, and celery, cooking until softened.
- Stir in garlic and tomato paste, cooking for another minute.
- Sprinkle in flour, stirring constantly, then slowly add white wine and broth.
- Simmer for 15 minutes, then blend until smooth.
- Add heavy cream, paprika, cayenne, salt, and pepper. Stir well.
- Mix in lobster meat and let cook for 5 minutes.
- Garnish with fresh parsley and serve warm.
Notes
- You can use shrimp if lobster is unavailable.
- Add a splash of sherry for extra richness.
