  • 8 lasagna noodles, broken into bite-sized pieces

For the Creamy Finish:

  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

For Garnish:

  • Fresh basil, chopped
  • Ricotta cheese (optional)

Instructions

  1. Cook the Ground Beef:
    • Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it into crumbles. Drain excess grease if necessary.
  2. Sauté Aromatics:
    • Add the diced onion and garlic to the pot and sauté until softened and fragrant, about 2-3 minutes.
  3. Build the Broth:
    • Stir in the broth, marinara sauce, diced tomatoes, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer.
  4. Cook the Noodles:
    • Add the broken lasagna noodles to the pot and cook for 8-10 minutes, stirring occasionally, until the noodles are tender.
  5. Make it Creamy:
    • Reduce the heat to low. Stir in the heavy cream, mozzarella, and Parmesan cheese until melted and the soup is creamy. Taste and adjust seasoning with salt and pepper as needed.
