- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 tsp vanilla extract
- 2 cups shredded zucchini (moisture lightly squeezed out)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, whisk eggs, oil, granulated sugar, brown sugar, and vanilla until smooth.
- Stir in the shredded zucchini.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep the bread tender.
- You can substitute part of the oil with applesauce for a lighter version.
- This bread freezes well—wrap tightly and store for up to 3 months.
