- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1/4 cup freeze-dried raspberries, crushed
- 1 tsp raspberry liqueur or raspberry extract (optional)
- 1/2 cup finely chopped pistachios (plus more for coating)
- Optional: cocoa powder or extra crushed raspberries for coating
Instructions
- Place chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat cream and butter over medium heat until just simmering.
- Pour the hot cream mixture over the chocolate. Let sit for 1–2 minutes, then stir until smooth.
- Stir in raspberry liqueur or extract (if using) and crushed freeze-dried raspberries.
- Cover and refrigerate for 1–2 hours until firm.
- Scoop and roll the mixture into 1-inch balls.
- Roll each truffle in chopped pistachios, cocoa powder, or crushed raspberries.
- Chill truffles for 15–30 minutes to set. Serve chilled or at room temperature.
