Description

Dark Chocolate Pistachio Raspberry Truffles are rich, elegant confections combining dark chocolate ganache, tart raspberries, and crunchy pistachios—perfect for gifting or indulging in a luxurious homemade treat.


Ingredients

  • 8 oz dark chocolate (60-70% cocoa), chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 cup freeze-dried raspberries, crushed
  • 1 tsp raspberry liqueur or raspberry extract (optional)
  • 1/2 cup finely chopped pistachios (plus more for coating)
  • Optional: cocoa powder or extra crushed raspberries for coating

Instructions

  1. Place chopped dark chocolate in a heatproof bowl.
  2. In a small saucepan, heat cream and butter over medium heat until just simmering.
  3. Pour the hot cream mixture over the chocolate. Let sit for 1–2 minutes, then stir until smooth.
  4. Stir in raspberry liqueur or extract (if using) and crushed freeze-dried raspberries.
  5. Cover and refrigerate for 1–2 hours until firm.
  6. Scoop and roll the mixture into 1-inch balls.
  7. Roll each truffle in chopped pistachios, cocoa powder, or crushed raspberries.
  8. Chill truffles for 15–30 minutes to set. Serve chilled or at room temperature.
