Description

Dan Dan Noodles is a spicy, savory Sichuan noodle dish with a rich umami sauce, ground meat, and bold seasonings. It’s quick to prepare, highly customizable, and perfect for a flavorful meal.


Ingredients

  • 6 oz Chinese wheat noodles or ramen
  • 1/2 lb ground pork or beef
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 green onions, chopped (white and green parts separated)
  • 2 tbsp soy sauce
  • 1 tbsp sesame paste or peanut butter
  • 2 tbsp chili oil (adjust to taste)
  • 1 tbsp Chinese black vinegar
  • 1/2 tsp ground Sichuan peppercorns
  • 1/4 cup chicken broth or water
  • 1 tsp sugar

Instructions

  1. Cook noodles according to package instructions, drain, and set aside.
  2. In a skillet, sauté garlic, ginger, and white parts of green onions over medium heat until fragrant.
  3. Add ground meat and cook until browned, breaking it apart as it cooks.
  4. Stir in 1 tbsp soy sauce and sugar. Cook for another 2–3 minutes, then set aside.
  5. In a bowl, mix sesame paste, chili oil, black vinegar, remaining soy sauce, chicken broth, and Sichuan peppercorns to form the sauce.
  6. Place noodles in serving bowls. Pour sauce over noodles and top with the meat mixture.
  7. Garnish with green parts of green onions and additional chili oil if desired.

Notes

  • Use tahini or peanut butter if sesame paste is unavailable.
  • Vegetarian version: substitute meat with crumbled tofu or meat alternatives.
  • Control spice by adjusting the amount of chili oil.
  • Sauce can be made ahead and stored for up to 5 days.
  • Add vegetables like bok choy or spinach for extra nutrition.
