- 6 oz Chinese wheat noodles or ramen
- 1/2 lb ground pork or beef
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 2 green onions, chopped (white and green parts separated)
- 2 tbsp soy sauce
- 1 tbsp sesame paste or peanut butter
- 2 tbsp chili oil (adjust to taste)
- 1 tbsp Chinese black vinegar
- 1/2 tsp ground Sichuan peppercorns
- 1/4 cup chicken broth or water
- 1 tsp sugar
Instructions
- Cook noodles according to package instructions, drain, and set aside.
- In a skillet, sauté garlic, ginger, and white parts of green onions over medium heat until fragrant.
- Add ground meat and cook until browned, breaking it apart as it cooks.
- Stir in 1 tbsp soy sauce and sugar. Cook for another 2–3 minutes, then set aside.
- In a bowl, mix sesame paste, chili oil, black vinegar, remaining soy sauce, chicken broth, and Sichuan peppercorns to form the sauce.
- Place noodles in serving bowls. Pour sauce over noodles and top with the meat mixture.
- Garnish with green parts of green onions and additional chili oil if desired.
Notes
- Use tahini or peanut butter if sesame paste is unavailable.
- Vegetarian version: substitute meat with crumbled tofu or meat alternatives.
- Control spice by adjusting the amount of chili oil.
- Sauce can be made ahead and stored for up to 5 days.
- Add vegetables like bok choy or spinach for extra nutrition.
