- 2 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- Salt and black pepper to taste
Instructions
- In a large bowl, combine cherry tomatoes, cucumber slices, and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar or lemon juice, salt, and pepper.
- Pour the dressing over the vegetables and toss gently to combine.
- Fold in the chopped herbs just before serving.
- Serve immediately or chill in the fridge for 15–20 minutes to let flavors meld.
Notes
- Use a mandoline for evenly sliced cucumbers and onions.
- Add crumbled feta or olives for a Mediterranean twist.
- Best enjoyed fresh, but can be stored in the fridge for up to 1 day.
