- 4 cups red cabbage, finely shredded
- 2 medium carrots, julienned or grated
- 2 green onions, thinly sliced
- 2 tbsp fresh cilantro or parsley, chopped
- Optional: 1/2 cup thinly sliced apple, mango, or jicama
- For the citrus-herb dressing:
- 2 tbsp fresh lime or lemon juice
- 1 tsp lime or lemon zest
- 2 tbsp olive oil or neutral oil
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard
- 1 clove garlic, minced (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Finely slice cabbage and carrots. Thinly slice green onions. Combine all in a large mixing bowl along with optional fruits or jicama.
- In a separate bowl, whisk together lime/lemon juice and zest, oil, honey/maple syrup, mustard, garlic (if using), salt, and pepper until emulsified.
- Pour the dressing over the slaw mixture and toss thoroughly to coat evenly.
- Let sit for 5–10 minutes to allow flavors to meld and cabbage to slightly soften.
- Transfer to a serving dish and garnish with fresh cilantro or parsley just before serving.
