Description

This vibrant and refreshing Crunchy Red Cabbage Slaw combines crisp red cabbage, sweet carrots, and a tangy citrus dressing to create a colorful, healthful side dish. With bold flavors and satisfying crunch, it’s an excellent pairing for grilled meats, tacos, sandwiches, or casual gatherings.


Ingredients

  • 4 cups red cabbage, finely shredded
  • 2 medium carrots, julienned or grated
  • 2 green onions, thinly sliced
  • 2 tbsp fresh cilantro or parsley, chopped
  • Optional: 1/2 cup thinly sliced apple, mango, or jicama
  • For the citrus-herb dressing:
  • 2 tbsp fresh lime or lemon juice
  • 1 tsp lime or lemon zest
  • 2 tbsp olive oil or neutral oil
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Finely slice cabbage and carrots. Thinly slice green onions. Combine all in a large mixing bowl along with optional fruits or jicama.
  2. In a separate bowl, whisk together lime/lemon juice and zest, oil, honey/maple syrup, mustard, garlic (if using), salt, and pepper until emulsified.
  3. Pour the dressing over the slaw mixture and toss thoroughly to coat evenly.
  4. Let sit for 5–10 minutes to allow flavors to meld and cabbage to slightly soften.
  5. Transfer to a serving dish and garnish with fresh cilantro or parsley just before serving.

Notes

  • Dress just before serving for maximum crunch.
  • Store leftover slaw in an airtight container for up to 2 days.
  • Use a mandoline for uniform, thin vegetable slicing.
