Description

  • Herbed Yogurt Dip:
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice

  • 1 tablespoon chopped fresh herbs (e.g., dill, mint, or parsley)
  • Salt and pepper to taste

Instructions

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Then squeeze out excess moisture using a clean kitchen towel.
  2. In a bowl, mix zucchini with flour, Parmesan, egg, green onions, herbs, and pepper until combined.
  3. Heat olive oil in a skillet over medium heat. Scoop heaping tablespoons of mixture into the skillet, flatten slightly, and cook 3–4 minutes per side until golden brown.
  4. Transfer fritters to a plate lined with paper towels to drain excess oil.
  5. For the dip, mix yogurt, lemon juice, garlic, chopped herbs, salt, and pepper in a small bowl.
  6. Serve fritters warm with herbed yogurt dip on the side.
