- 1 cup grated carrots
- 1 cup grated boiled potatoes
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped bell peppers
- 1/2 cup sweet corn (optional)
- 1 cup shredded mozzarella or processed cheese
- 1/2 tsp garlic powder
- 1/2 tsp chili flakes
- 1/2 tsp black pepper
- Salt to taste
- 2 tbsp cornflour
- 1/4 cup breadcrumbs (plus extra for coating)
- Oil for deep frying
Instructions
- Mix all ingredients (except oil and coating breadcrumbs) in a bowl.
- Shape into small balls and chill for 20 minutes.
- Roll each ball in breadcrumbs for extra crispiness.
- Heat oil in a pan and deep-fry until golden brown.
- Drain on paper towels and serve hot with ketchup or garlic dip.
Notes
For baking or air frying, brush lightly with oil and cook at 375°F (190°C) until golden.
