- 2 large Russet potatoes, shredded
- 1 small onion, finely chopped or shredded
- 1 large egg
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
- Chopped chives (for garnish)
- Vegetable oil for frying
Instructions
- Peel and shred the potatoes. Place in a clean towel and squeeze out as much moisture as possible.
- In a large bowl, combine shredded potatoes, onion, egg, flour, salt, pepper, and garlic powder if using. Mix until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Scoop about 1/4 cup of the mixture and form into a patty. Place in the hot oil.
- Fry each patty for 3–4 minutes per side or until golden and crispy.
- Remove and drain on paper towels.
- Garnish with chopped chives and serve warm with your favorite dipping sauce.
Notes
- Squeeze potatoes well to prevent soggy fritters.
- Use starchy potatoes like Russets for best crispiness.
- Reheat in an oven or skillet to retain texture.
