- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup breadcrumbs
- 1 egg, beaten
- Oil for frying
Instructions
- In a bowl, mix mashed potatoes, cheddar, Parmesan, garlic powder, salt, and pepper.
- Shape into small balls and roll in breadcrumbs.
- Dip in beaten egg and roll in breadcrumbs again.
- Heat oil in a pan and fry until golden brown.
- Drain on paper towels and serve hot.
Notes
- Add cooked bacon bits for extra flavor.
- Bake instead of frying for a healthier version.
