Description

Crispy Potato Cakes are pan-fried patties made from mashed potatoes, seasoned and coated for a golden crunch. Soft inside and crispy outside, they’re ideal as a snack, side, or appetizer.


Ingredients

  • 2 cups mashed potatoes
  • 1 egg
  • 1/2 cup breadcrumbs (plus more for coating)
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Fresh parsley (optional, for garnish)
  • Vegetable oil (for frying)

Instructions

  1. In a bowl, combine mashed potatoes, egg, salt, pepper, garlic powder, and 1/2 cup breadcrumbs. Mix well.
  2. Shape mixture into 10–12 small patties.
  3. Lightly coat each patty in flour, dip in beaten egg (optional), then dredge in additional breadcrumbs.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Fry the patties in batches, 3–4 minutes per side, until golden brown and crispy.
  6. Remove and drain on paper towels. Garnish with chopped parsley if desired.
  7. Serve warm, optionally with sour cream or applesauce.

Notes

  • Best made with starchy potatoes like Russets for a fluffy texture.
  • Chill the mixture if it’s too soft to shape easily.
  • Use gluten-free flour and breadcrumbs for a GF version.
  • Add cheese, herbs, or spices to customize the flavor.
