Description

This Crispy Mozzarella-Stuffed Chicken features juicy, tender chicken breasts filled with gooey melted mozzarella, coated in a crunchy, golden breadcrumb crust. A restaurant-quality dish made easy at home!

For the Chicken:
  • 2 large boneless, skinless chicken breasts
  • 4 slices mozzarella cheese (or 1 cup shredded mozzarella)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 tbsp olive oil (for searing)
For the Breading:
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
For Frying:
  • 1/2 cup vegetable oil (or as needed)

Instructions

  • Prepare the Chicken:

    • Slice each chicken breast horizontally (without cutting all the way through) to create a pocket.
    • Season inside and out with salt, pepper, garlic powder, and Italian seasoning.
    • Stuff each pocket with mozzarella slices, then secure with toothpicks.
  • Coat the Chicken:

    • Place flour in one bowl, beaten eggs in another, and mix panko, Parmesan, and paprika in a third.
    • Dredge stuffed chicken in flour, then dip in eggs, and finally coat in the breadcrumb mixture.
  • Fry the Chicken:

    • Heat oil in a skillet over medium heat. Sear the chicken for 3-4 minutes per side, until golden brown.
    • Transfer to a 375°F (190°C) oven and bake for 10-15 minutes, or until the chicken reaches an internal temp of 165°F (75°C).
  • Serve:

    • Let rest for 5 minutes, then slice and serve!

Notes

  • Try adding sun-dried tomatoes or fresh basil inside for extra flavor.
  • Use provolone or cheddar for a different cheese pull effect.
  • Serve with marinara sauce, mashed potatoes, or a fresh salad.
