For the Chicken:
- 2 large boneless, skinless chicken breasts
- 4 slices mozzarella cheese (or 1 cup shredded mozzarella)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 tbsp olive oil (for searing)
For the Breading:
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
For Frying:
- 1/2 cup vegetable oil (or as needed)

Prepare the Chicken:
- Slice each chicken breast horizontally (without cutting all the way through) to create a pocket.
- Season inside and out with salt, pepper, garlic powder, and Italian seasoning.
- Stuff each pocket with mozzarella slices, then secure with toothpicks.

Coat the Chicken:
- Place flour in one bowl, beaten eggs in another, and mix panko, Parmesan, and paprika in a third.
- Dredge stuffed chicken in flour, then dip in eggs, and finally coat in the breadcrumb mixture.

Fry the Chicken:
- Heat oil in a skillet over medium heat. Sear the chicken for 3-4 minutes per side, until golden brown.
- Transfer to a 375°F (190°C) oven and bake for 10-15 minutes, or until the chicken reaches an internal temp of 165°F (75°C).

- Let rest for 5 minutes, then slice and serve!
Notes
- Try adding sun-dried tomatoes or fresh basil inside for extra flavor.
- Use provolone or cheddar for a different cheese pull effect.
