- 4 cloves garlic, minced
- 2 tablespoons soy sauce

- 1 teaspoon cornstarch mixed with 2 teaspoons water
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the potatoes in a single layer on the baking sheet and roast for 30–35 minutes, flipping halfway, until golden and crispy.
- Meanwhile, in a small saucepan over medium heat, melt the butter and add minced garlic. Sauté for 30 seconds until fragrant.
- Stir in honey and soy sauce, then bring to a gentle simmer.
- Add the cornstarch slurry and cook until the sauce thickens slightly.
- Remove potatoes from the oven and transfer to a large bowl.
- Pour the honey garlic sauce over the potatoes and toss until well coated.
- Garnish with fresh parsley if desired and serve immediately.
Notes
- For extra crispiness, soak potatoes in cold water for 20 minutes before roasting.
- You can substitute maple syrup for honey for a different flavor.
