Description

Crispy Herb-Roasted Baby Potatoes are golden, flavorful potatoes roasted with herbs, garlic, and a touch of cheese. Crisp on the outside and tender on the inside, they make a versatile and satisfying side dish for any meal.


Ingredients

  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup crumbled feta cheese or goat cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the halved potatoes with olive oil, minced garlic, thyme, oregano, salt, and black pepper.
  4. Spread the potatoes cut-side down on a baking sheet in a single layer.
  5. Roast for 25–30 minutes until the potatoes are golden brown and crispy on the edges.
  6. Remove from oven and sprinkle immediately with crumbled feta or goat cheese.
  7. Garnish with fresh parsley, if using.
  8. Serve hot as a side or appetizer.
