- 1/4 cup crumbled feta cheese or goat cheese
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, thyme, oregano, salt, and black pepper.
- Spread the potatoes cut-side down on a baking sheet in a single layer.
- Roast for 25–30 minutes until the potatoes are golden brown and crispy on the edges.
- Remove from oven and sprinkle immediately with crumbled feta or goat cheese.
- Garnish with fresh parsley, if using.
- Serve hot as a side or appetizer.

- For best crispiness, avoid overcrowding the baking sheet.
- Use parchment paper or a well-oiled pan to prevent sticking.
