Description

Golden, crispy fritters packed with sweet corn, fresh vegetables, and herbs, served with a flavorful dipping sauce. These fritters make a perfect snack, appetizer, or light lunch option.


Ingredients

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup grated carrot
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika or chili powder (optional)
  • 2 large eggs
  • 1/3 cup milk or water
  • Vegetable oil, for frying
  • For dipping sauce: 1/4 cup mayonnaise, 1 tbsp lemon juice, 1 tsp chili sauce or sriracha

Instructions

  1. In a large mixing bowl, combine corn, grated carrot, bell pepper, green onions, and chopped herbs.
  2. In a separate bowl, whisk together the flour, baking powder, salt, pepper, and paprika.
  3. Add the dry ingredients to the vegetables and mix until evenly coated.
  4. Whisk eggs and milk in another bowl, then pour into the vegetable mixture and stir until combined to form a thick batter.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  6. Spoon heaped tablespoons of batter into the skillet, flattening slightly with the back of the spoon.
  7. Cook for 2–3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
  8. For the dipping sauce, mix mayonnaise, lemon juice, and chili sauce until smooth.
  9. Serve the fritters hot with the dipping sauce on the side.

Notes

  • For extra crunch, use fresh corn off the cob.
  • You can make these fritters gluten-free by using a gluten-free flour blend.
  • Add finely chopped zucchini or spinach for extra vegetables.
  • Fritters can be kept warm in a low oven while cooking the rest of the batch.
  • Best served fresh and crispy, but leftovers can be reheated in an oven or air fryer.
