- 1 cup corn kernels (fresh, canned, or frozen)
- 1/2 cup grated carrot
- 1/2 cup red bell pepper, finely diced
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro or parsley, chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika or chili powder (optional)
- 2 large eggs
- 1/3 cup milk or water
- Vegetable oil, for frying
- For dipping sauce: 1/4 cup mayonnaise, 1 tbsp lemon juice, 1 tsp chili sauce or sriracha
Instructions
- In a large mixing bowl, combine corn, grated carrot, bell pepper, green onions, and chopped herbs.
- In a separate bowl, whisk together the flour, baking powder, salt, pepper, and paprika.
- Add the dry ingredients to the vegetables and mix until evenly coated.
- Whisk eggs and milk in another bowl, then pour into the vegetable mixture and stir until combined to form a thick batter.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Spoon heaped tablespoons of batter into the skillet, flattening slightly with the back of the spoon.
- Cook for 2–3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
- For the dipping sauce, mix mayonnaise, lemon juice, and chili sauce until smooth.
- Serve the fritters hot with the dipping sauce on the side.
Notes
- For extra crunch, use fresh corn off the cob.
- You can make these fritters gluten-free by using a gluten-free flour blend.
- Add finely chopped zucchini or spinach for extra vegetables.
- Fritters can be kept warm in a low oven while cooking the rest of the batch.
- Best served fresh and crispy, but leftovers can be reheated in an oven or air fryer.
