- 2 cups broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
- 2–3 tablespoons olive oil, for frying
Instructions
- Steam or blanch the broccoli florets for 2–3 minutes until slightly tender. Drain and finely chop.
- In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, eggs, flour, breadcrumbs, garlic, salt, pepper, and parsley.
- Mix until well combined and the mixture holds together when pressed.
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly.
- Cook the fritters in batches for 3–4 minutes on each side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dip or sauce.
Notes
- You can use frozen broccoli; just thaw and drain well before chopping.
- Try different cheeses like mozzarella or feta for variation.
- Bake in the oven at 400°F (200°C) for a healthier option, flipping halfway through.
