For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
For the Filling:
- 1/2 cup (75g) sun-dried tomatoes, chopped
- 1 cup (120g) fresh spinach, chopped
- 1/2 cup (120g) shredded mozzarella cheese
- 1/4 cup (60g) cream cheese, softened
- 1/4 teaspoon red pepper flakes (optional)
For the Creamy Sauce:
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the Chicken:
- Preheat oven to 375°F (190°C).
- Butterfly each chicken breast by slicing through the middle without cutting all the way through.
- Season both sides with salt, pepper, garlic powder, and paprika.
- Make the Filling:
- In a bowl, mix sun-dried tomatoes, spinach, mozzarella, cream cheese, and red pepper flakes.
- Stuff each chicken breast with the filling and secure with toothpicks.
- Sear the Chicken:
- Heat olive oil in a large oven-safe skillet over medium heat.
- Sear the chicken for 2-3 minutes per side until golden brown.
- Prepare the Sauce:
- Remove the chicken from the pan and set aside.
- In the same pan, melt butter and sauté garlic until fragrant.
- Pour in heavy cream, Parmesan cheese, Italian seasoning, salt, and black pepper. Stir until smooth.
- Bake the Chicken:
- Return the stuffed chicken to the skillet, spoon some sauce over the top, and bake for 20 minutes until fully cooked.
- Serve and Enjoy:
- Garnish with fresh basil or parsley and serve with pasta or vegetables.
Notes
- Use toothpicks to keep the filling inside while cooking.
- Let the chicken rest for 5 minutes before slicing to keep it juicy.
