- 4 boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes (in oil), drained and chopped
- 2 cups fresh baby spinach
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 6-7 minutes per side or until golden brown and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer for 2-3 minutes until slightly thickened.
- Add sun-dried tomatoes and spinach to the sauce. Cook for 2-3 minutes until spinach wilts.
- Return chicken to the skillet and spoon sauce over the top. Simmer for another 2-3 minutes to reheat.
- Garnish with chopped parsley and serve immediately.
Notes
- Use boneless chicken thighs for a juicier variation.
- Serve over pasta, mashed potatoes, or zucchini noodles for a full meal.
- For extra depth, deglaze the pan with a splash of white wine before adding cream.
