A creamy, herb-infused skillet chicken dish simmered with sweet corn, garlic, and fresh herbs for a comforting, flavorful weeknight meal.

- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 1 cup fresh or frozen corn kernels
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tbsp fresh basil, chopped
Instructions
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil and butter in a skillet over medium heat. Add the chicken and cook for 6–7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add the corn and sauté for 2 minutes.
- Add the garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Simmer for 5 minutes until the sauce begins to thicken.
- Return the chicken to the skillet, spoon sauce over the top, and simmer for another 3–4 minutes.
- Stir in the fresh herbs and adjust seasoning as needed.
- Serve warm with additional herbs on top.
Notes
- Use bone-in chicken thighs for a richer flavor.
- Substitute half-and-half for a lighter sauce.
- Add spinach or cherry tomatoes for extra veggies.
