Description

Creamy Sausage Potato Soup is a hearty and comforting one-pot meal filled with tender potatoes, savory sausage, and vegetables in a creamy broth. Perfect for cozy dinners and meal prep alike.


Ingredients

  • 12 oz smoked sausage or kielbasa, sliced
  • 1.5 lbs red or Yukon gold potatoes, cubed
  • 2 carrots, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tbsp butter or olive oil
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Heat butter or olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until browned. Remove and set aside.
  3. In the same pot, sauté onion, carrots, and garlic until softened, about 4–5 minutes.
  4. Add cubed potatoes and pour in chicken broth. Bring to a boil.
  5. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  6. Return the browned sausage to the pot and stir in heavy cream.
  7. Simmer for another 5 minutes. Season with salt and pepper to taste.
  8. Garnish with chopped parsley and serve hot.
