- 12 oz smoked sausage or kielbasa, sliced
- 1.5 lbs red or Yukon gold potatoes, cubed
- 2 carrots, sliced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 2 tbsp butter or olive oil
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Heat butter or olive oil in a large pot over medium heat.
- Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, and garlic until softened, about 4–5 minutes.
- Add cubed potatoes and pour in chicken broth. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Return the browned sausage to the pot and stir in heavy cream.
- Simmer for another 5 minutes. Season with salt and pepper to taste.
- Garnish with chopped parsley and serve hot.
