- 12 oz pasta (penne, fettuccine, or your choice)
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (12 oz) jar roasted red peppers, drained
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley, for garnish
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft, then add garlic and cook for 1 more minute.
- Transfer sautéed onion and garlic to a blender along with roasted red peppers and blend until smooth.
- Return the blended sauce to the skillet. Stir in heavy cream, Parmesan cheese, red pepper flakes (if using), salt, and pepper. Simmer for 5 minutes.
- Add cooked pasta to the sauce and toss to coat evenly. Cook for another 2–3 minutes to heat through.
- Garnish with fresh basil or parsley and serve warm.
Notes
- For a vegan version, use coconut cream and omit Parmesan or use a vegan cheese alternative.
- You can add grilled chicken, shrimp, or sautéed mushrooms for added protein.
- Use fresh roasted red peppers for deeper flavor if desired.
