- 2 tbsp olive oil
- 2 large chicken breasts, halved horizontally
- Salt and pepper, to taste
- 1 tbsp unsalted butter
- 8 oz mushrooms, sliced (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 tsp dried thyme
- 3 cups fresh spinach
- Fresh parsley, chopped (optional for garnish)
Instructions
- Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add butter and mushrooms. Sauté until mushrooms are browned and their moisture has evaporated, about 6-8 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and stir, scraping up any browned bits. Simmer for 2 minutes.
- Add heavy cream, Parmesan cheese, and thyme. Stir and simmer for 3-4 minutes until slightly thickened.
- Add spinach and cook until wilted, about 2 minutes.
- Return chicken to the skillet and coat with sauce. Simmer 2 more minutes to reheat chicken.
- Garnish with parsley if desired and serve hot.

- Use baby spinach for faster wilting and tender texture.
- For extra flavor, add a splash of white wine when deglazing the pan with chicken broth.
