For the Steak:
- 2 ribeye, sirloin, or filet mignon steaks (about 1 inch thick)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1 tbsp olive oil
For the Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh rosemary (or 1/2 tsp dried)
- 1 tbsp chopped parsley
- 1 tbsp lemon juice (optional)
For Serving:
- Roasted potatoes, mashed potatoes, or grilled vegetables
Instructions
- Prepare the Steak:
- Pat the steaks dry with a paper towel.
- Season with salt, black pepper, and paprika on both sides.
- Sear the Steak:
- Heat olive oil in a cast-iron skillet over high heat.
- Add the steaks and sear for 3–4 minutes per side for medium-rare (adjust time for preferred doneness).
- Transfer steaks to a plate and let them rest.
- Make the Garlic Butter Sauce:
- In the same skillet, reduce heat to medium.
- Melt butter and add minced garlic, thyme, and rosemary. Sauté for 1 minute until fragrant.
- Stir in lemon juice for extra flavor (optional).
- Baste the Steak:
- Return the steaks to the pan and spoon the garlic butter over them.
- Cook for another minute while continuously basting.
- Serve & Garnish:
- Remove from heat and let the steaks rest for 5 minutes.
- Sprinkle with fresh parsley and serve with your favorite sides.
Notes
- For a perfect crust, make sure your skillet is hot before adding the steaks.
- Adjust cooking times based on doneness:
- Rare: 2–3 minutes per side (125°F)
- Medium-Rare: 3–4 minutes per side (130°F)
- Medium: 4–5 minutes per side (140°F)
- Well-Done: 5+ minutes per side (160°F)
