For the Steak:

  • 2 ribeye, sirloin, or filet mignon steaks (about 1 inch thick)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 tbsp olive oil

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh rosemary (or 1/2 tsp dried)
  • 1 tbsp chopped parsley
  • 1 tbsp lemon juice (optional)

For Serving:

  • Roasted potatoes, mashed potatoes, or grilled vegetables

Instructions

  1. Prepare the Steak:
    • Pat the steaks dry with a paper towel.
    • Season with salt, black pepper, and paprika on both sides.
  2. Sear the Steak:
    • Heat olive oil in a cast-iron skillet over high heat.
    • Add the steaks and sear for 3–4 minutes per side for medium-rare (adjust time for preferred doneness).
    • Transfer steaks to a plate and let them rest.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, reduce heat to medium.
    • Melt butter and add minced garlic, thyme, and rosemary. Sauté for 1 minute until fragrant.
    • Stir in lemon juice for extra flavor (optional).
  4. Baste the Steak:
    • Return the steaks to the pan and spoon the garlic butter over them.
    • Cook for another minute while continuously basting.
  5. Serve & Garnish:
    • Remove from heat and let the steaks rest for 5 minutes.
    • Sprinkle with fresh parsley and serve with your favorite sides.

Notes

  • For a perfect crust, make sure your skillet is hot before adding the steaks.
  • Adjust cooking times based on doneness:
    • Rare: 2–3 minutes per side (125°F)
    • Medium-Rare: 3–4 minutes per side (130°F)
    • Medium: 4–5 minutes per side (140°F)
