- 4 bone-in or boneless pork chops
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp Dijon mustard
- 1 tsp dried thyme
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Sear the Pork Chops:
Heat olive oil in a large skillet over medium heat. Season the pork chops with salt and pepper, then sear for 3-4 minutes per side until golden brown. Remove and set aside. - Cook the Mushrooms:
In the same skillet, melt butter and sauté mushrooms until browned and tender, about 5 minutes. Add garlic and cook for 1 minute. - Make the Sauce:
Stir in heavy cream, chicken broth, Dijon mustard, and thyme. Simmer for 2-3 minutes until slightly thickened. - Combine and Cook:
Return the pork chops to the skillet and spoon the sauce over them. Simmer for 5-7 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F/63°C). - Garnish and Serve:
Sprinkle with fresh parsley and serve hot with your favorite sides.
