  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Sear the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for 4-5 minutes on each side until golden. Remove and set aside.
  2. Cook the Mushrooms:
    In the same skillet, melt butter and sauté mushrooms until tender and golden, about 5 minutes. Add garlic and cook for 1 minute.
  3. Prepare the Sauce:
    Stir in heavy cream, chicken broth, Dijon mustard, and thyme. Bring to a gentle simmer and cook for 2-3 minutes until the sauce thickens.
  4. Finish Cooking:
    Return the chicken breasts to the skillet, spoon the sauce over them, and simmer for 5-7 minutes until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  5. Garnish and Serve:
    Sprinkle with fresh parsley and serve hot with your favorite sides.
