- 2 large boneless, skinless chicken breasts (halved to make 4 thin fillets)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms (sliced)
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Fresh parsley (for garnish)
Instructions
- Prepare the Chicken – Season the chicken fillets with salt, black pepper, and paprika.
- Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- Sauté Mushrooms and Garlic – In the same skillet, melt butter and add mushrooms. Cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
- Make the Sauce – Pour in chicken broth and heavy cream, then add parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the sauce is smooth.
- Combine and Simmer – Return the cooked chicken to the skillet, coating it in the sauce. Simmer for 5 minutes until the sauce thickens.
- Serve – Garnish with fresh parsley and serve with pasta, rice, or mashed potatoes.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add spinach or sun-dried tomatoes for extra flavor.
- If the sauce is too thick, add a little more chicken broth to thin it out.
