Description

This Creamy Coconut Curry Chicken is a rich, flavorful dish infused with warm spices, tender chicken, and a velvety coconut curry sauce. Perfectly paired with rice or naan, it’s a comforting meal ready in just 30 minutes!

  • 1 lb chicken breast, sliced
  • 2 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 cup coconut milk (full-fat)
  • 1/2 cup diced tomatoes
  • 1/2 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish

Instructions

  1. Sear the Chicken:
    Heat oil in a large skillet over medium heat. Sear the chicken until lightly browned but not fully cooked. Remove and set aside.
  2. Sauté Aromatics:
    In the same skillet, sauté onion, garlic, and ginger until softened and fragrant. Stir in curry powder and turmeric.
  3. Create the Sauce:
    Add coconut milk, diced tomatoes, chicken broth, and tomato paste to the skillet. Simmer for 5 minutes.
  4. Finish Cooking:
    Return the chicken to the skillet and simmer for 8-10 minutes, until the chicken is fully cooked and the sauce thickens.
  5. Garnish and Serve:
    Stir in lime juice, garnish with fresh cilantro, and serve over rice or with naan bread.

Notes

  • For a spicier curry, add a pinch of cayenne pepper or chili flakes.
