- 12 oz penne pasta
- 12 oz smoked sausage or andouille sausage, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 tbsp Cajun seasoning (adjust to taste)
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned and crispy on the edges. Remove and set aside.
- In the same skillet, add diced onion and cook until translucent. Stir in garlic and sauté for 1 minute.
- Pour in the heavy cream and bring to a simmer. Stir in Cajun seasoning, salt, and pepper. Let cook for 4–5 minutes until slightly thickened.
- Add grated Parmesan cheese and stir until melted and creamy.
- Return the sausage and cooked pasta to the skillet. Toss to coat everything evenly in the sauce.
- Garnish with chopped parsley and extra Parmesan if desired. Serve immediately.
