- 24 ladyfinger biscuits (savoiardi)
- 16 oz mascarpone cheese
- 1 cup heavy whipping cream
- 4 egg yolks
- 1/2 cup granulated sugar
- 1 1/2 cups brewed espresso or strong coffee, cooled
- 2 tbsp coffee liqueur (optional)
- 2 tbsp unsweetened cocoa powder (for dusting)
- 2 oz dark chocolate, melted (for drizzle)
- 1 tsp vanilla extract
Instructions
- Brew espresso or strong coffee and allow to cool. Stir in coffee liqueur if using.
- In a heatproof bowl over a double boiler, whisk egg yolks and sugar until thick and pale. Set aside to cool slightly.
- Whip heavy cream to stiff peaks.
- In another bowl, beat mascarpone until smooth. Fold in the cooled egg mixture, followed by whipped cream and vanilla extract.
- Quickly dip each ladyfinger into the coffee mixture, avoiding oversaturation.
- Arrange a layer of dipped ladyfingers in a square or rectangular dish. Spread half of the mascarpone mixture over the layer.
- Repeat with remaining ladyfingers and mascarpone cream.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and drizzle with melted dark chocolate.
- Cut into squares using a hot knife for clean slices.
