Description

Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the peanut butter, egg, and vanilla extract, and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll dough into 1-inch balls and place on prepared baking sheets about 2 inches apart.
  7. Use a fork to flatten each ball in a crisscross pattern.
  8. Bake for 10–12 minutes or until the edges are lightly golden. Do not overbake.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a crunchier texture, use chunky peanut butter instead of creamy.
  • Cookies can be stored in an airtight container for up to a week.
  • Freeze dough balls for future baking – no need to thaw, just add a minute or two to baking time.
