- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (8 oz) tomato sauce
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 cup beef broth
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 1 minute to bloom the spices.
- Add diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth. Stir to combine.
- Bring the chili to a simmer, then reduce heat to low. Cover and cook for 30–45 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. Serve hot with toppings like cheese, sour cream, or green onions.
Notes
- For thicker chili, simmer uncovered for the last 10–15 minutes.
- Substitute turkey or plant-based meat for a lighter version.
- Chili tastes even better the next day as flavors develop.
