- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup red bell pepper, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 tbsp lemon juice
- 1 tbsp balsamic vinegar
Instructions
- Preheat grill or grill pan over medium-high heat.
- Rub chicken breasts with 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
- Grill chicken for 5–7 minutes per side, or until fully cooked (internal temperature reaches 165°F / 74°C). Let rest for 5 minutes before slicing.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, bell pepper, and red onion.
- Whisk together remaining olive oil, lemon juice, and balsamic vinegar to make the dressing.
- Arrange sliced grilled chicken over the salad, sprinkle with feta cheese, and drizzle with dressing.
- Toss gently before serving.
Notes
- For extra flavor, marinate chicken for at least 30 minutes before grilling.
- Substitute feta with goat cheese or mozzarella for a different twist.
- Great served with warm pita bread or a side of hummus.
