Classic Buckeye Balls are rich, no-bake treats featuring sweet and creamy peanut butter centers dipped in smooth chocolate, leaving a small circle of peanut butter exposed on top—just like the nut of the buckeye tree. These bite-sized candies are a holiday favorite and perfect for gifting.

- 1 1/2 cups creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 3 1/2 to 4 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil or shortening (optional, for smoother dipping)
Instructions
- In a large bowl, mix together peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add powdered sugar, mixing until a stiff dough forms. It should be firm enough to roll into balls without sticking.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Chill the peanut butter balls in the freezer for 30 minutes to firm up.
- In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.
- Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving the top exposed to create the “buckeye” look. Let excess chocolate drip off.
- Place dipped balls back on the baking sheet and chill until chocolate is set, about 20–30 minutes.
- Remove toothpicks and smooth over the holes with your finger if desired.

- Store in an airtight container in the refrigerator for up to 2 weeks.
- Buckeyes can also be frozen for up to 2 months—just thaw before serving.
