Description

Cinnamon Donut Loaf Cake is a moist, tender loaf that captures the classic flavor of a cinnamon sugar donut, perfect for breakfast, dessert, or a cozy afternoon snack.

Ingredients

Units Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • For topping:
  • 3 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, beat the eggs and sugar together until well combined.
  4. Mix in milk, melted butter, and vanilla extract.
  5. Add the dry ingredients to the wet ingredients and stir until just combined—do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool for 10 minutes, then remove from the pan and place on a wire rack.
  9. Brush the top and sides with melted butter while still warm, then sprinkle evenly with the cinnamon sugar mixture.
  10. Cool completely before slicing and serving.

Notes

  • Swirl extra cinnamon sugar inside the batter for a layered effect.
  • Add chopped apples or nuts for added texture and flavor.
  • Drizzle with a glaze made from powdered sugar and milk for a different finish.
  • The topping is best the day of baking but can be refreshed with more melted butter and sugar.
  • Store wrapped tightly to preserve moisture and flavor.
