Description

  • 2/3 cup granulated sugar, divided
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream, ganache, or mousse (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350 °F (175 °C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a bowl, beat egg yolks with half the sugar (1/3 cup) until pale and thick.
  3. In a separate bowl, beat egg whites until soft peaks form. Gradually add the remaining 1/3 cup sugar and beat to stiff peaks.
  4. Sift together flour, cocoa powder, baking powder, and salt. Gently fold into the yolk mixture.
  5. Carefully fold in the beaten egg whites until just incorporated.
  6. Spread batter evenly into the prepared pan and bake for 12–15 minutes, or until the cake springs back when lightly touched.
  7. While warm, invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment, roll the cake up (with the towel), and let it cool completely.
  8. Once cooled, gently unroll the cake and spread filling evenly across the surface.
  9. Re-roll the cake without the towel. Wrap in plastic wrap and chill for at least 1 hour to set.
  10. Slice and serve. Dust with powdered sugar, cocoa, or drizzle with chocolate if desired.
