- 24 ladyfinger biscuits
- 1 cup strong brewed coffee or espresso, cooled
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 4 oz dark chocolate, melted and cooled
- 1 1/2 cups fresh raspberries (plus extra for garnish)
- 2 tbsp cocoa powder, for dusting
Instructions
- Brew coffee or espresso and allow it to cool to room temperature.
- In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
- In a separate bowl, beat mascarpone cheese with vanilla extract and melted chocolate until smooth.
- Fold the whipped cream into the mascarpone mixture to create the chocolate cream filling.
- Quickly dip each ladyfinger into the coffee and arrange a layer in the bottom of an 8×8 inch dish.
- Spread half of the chocolate cream over the ladyfingers and top with half of the fresh raspberries.
- Repeat with another layer of dipped ladyfingers, remaining chocolate cream, and raspberries.
- Cover and chill for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and garnish with extra raspberries.
Notes
- Add raspberry liqueur to the coffee for an adult version.
- Substitute raspberries with strawberries or cherries if desired.
- Top with shaved chocolate or chopped toasted nuts for added texture.
- Use cream cheese in place of mascarpone if needed.
