Scale
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup peanut butter or almond butter
- 1 tsp vanilla extract
- 3 cups quick oats
- 1/4 tsp salt
Instructions
- In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
- Stir constantly and bring to a rolling boil. Let boil for 1 minute without stirring.
- Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth.
- Add the oats and mix well until fully coated.
- Drop spoonfuls of the mixture onto parchment-lined baking sheets.
- Let cookies cool at room temperature for about 30 minutes or refrigerate to speed up setting.
Notes
- Quick oats work best; old-fashioned oats will make a rougher texture.
- For a richer taste, add a handful of chocolate chips or a pinch of espresso powder.
- Use sunflower seed butter for a nut-free version.
- Store in an airtight container at room temperature for up to 1 week or freeze for longer storage.
