These Chocolate Mint Brownies are a rich and fudgy dessert with a refreshing minty layer and a silky chocolate ganache topping. Perfect for holidays or any time you crave the classic chocolate-mint combo.

- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 cup unsalted butter (for mint layer), softened
- 1 cup powdered sugar (for mint layer)
- 1 tbsp milk
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 3/4 cup semi-sweet chocolate chips (for ganache)
- 2 tbsp butter (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium saucepan, melt 1/2 cup butter. Remove from heat and stir in sugar, eggs, and vanilla.
- Beat in cocoa powder, flour, salt, and baking powder until well combined.
- Spread batter evenly into the prepared pan and bake for 20–25 minutes. Let cool completely.
- For the mint layer: Beat 1/4 cup butter until creamy. Add powdered sugar, milk, peppermint extract, and a few drops of green food coloring. Mix until smooth and spreadable.
- Spread the mint layer over the cooled brownies. Chill in the refrigerator until set (about 20 minutes).
- For ganache: Melt chocolate chips and 2 tbsp butter in the microwave or double boiler until smooth.
- Pour ganache over the mint layer and spread evenly. Chill until firm.
- Cut into squares and serve chilled or at room temperature.
Notes
- Use peppermint extract, not mint extract, for a true mint flavor.
- For easier slicing, dip a sharp knife in hot water and wipe clean between cuts.
- Brownies can be made a day ahead and stored in the refrigerator.
- Optional: top with crushed peppermint candies or chocolate shavings.
