- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup white chocolate chips or cream cheese (for filling)
- 1 cup chocolate chips (for coating)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Scoop about 2 tablespoons of dough and flatten it. Place a small spoonful of white chocolate or cream cheese in the center.
- Fold dough around the filling, seal the edges, and roll into a ball.
- Roll each ball in chocolate chips to coat the outside.
- Place on prepared baking sheet and bake for 10–12 minutes, until the edges are set but the center is still soft.
- Cool slightly before serving to enjoy the molten center.
Notes
- Ensure dough fully seals the filling to prevent leaks.
- Do not overbake—center should remain slightly underdone for the lava effect.
- Microwaving for 10–15 seconds helps revive the gooey center if cookies cool down.
- Chill dough if your kitchen is warm to avoid spreading.
- Use a small cookie scoop for uniform sizes and even baking.
