Classic homemade chocolate ice cream sandwiches made with soft, rich chocolate cookies and creamy vanilla ice cream, perfect for a nostalgic and refreshing dessert.

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 quart vanilla ice cream, slightly softened
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet and flatten slightly.
- Bake for 8–10 minutes until set but still soft. Allow cookies to cool completely.
- Scoop ice cream onto the flat side of one cookie and top with another cookie, pressing gently to form a sandwich.
- Freeze assembled sandwiches for at least 1 hour before serving.
Notes
- Roll the edges of the ice cream in sprinkles or mini chocolate chips for extra fun.
- Store wrapped sandwiches in the freezer for up to one week.
- You can use chocolate or mint ice cream for variation.
