Description

Classic homemade chocolate ice cream sandwiches made with soft, rich chocolate cookies and creamy vanilla ice cream, perfect for a nostalgic and refreshing dessert.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 quart vanilla ice cream, slightly softened

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet and flatten slightly.
  7. Bake for 8–10 minutes until set but still soft. Allow cookies to cool completely.
  8. Scoop ice cream onto the flat side of one cookie and top with another cookie, pressing gently to form a sandwich.
  9. Freeze assembled sandwiches for at least 1 hour before serving.

Notes

  • Roll the edges of the ice cream in sprinkles or mini chocolate chips for extra fun.
  • Store wrapped sandwiches in the freezer for up to one week.
  • You can use chocolate or mint ice cream for variation.
