Instructions
- In a small saucepan, heat heavy cream and butter over medium heat until steaming but not boiling.
- Pour hot cream over chopped chocolate in a heatproof bowl. Let sit for 1–2 minutes, then stir until smooth and fully melted.
- Stir in vanilla extract, chopped hazelnuts, and crispy rice cereal or crushed wafers until evenly combined.
- Let the mixture cool to room temperature, then refrigerate for about 1 hour or until firm enough to shape.
- Use a small scoop or spoon to roll the mixture into 1-inch balls.
- Roll truffles in cocoa powder, melted chocolate, or chopped hazelnuts, if desired.
- Chill the finished truffles for 15–30 minutes to firm up before serving.
