- 1 tsp vanilla extract (optional)
- For coating: cocoa powder, extra chopped hazelnuts, or melted chocolate
Instructions
- Place chopped chocolate in a heatproof bowl.
- In a small saucepan, heat cream and butter over medium heat until just simmering.
- Pour the hot cream mixture over the chocolate. Let sit for 1–2 minutes, then stir until smooth and glossy.
- Stir in vanilla extract (if using), chopped hazelnuts, and crispy rice cereal.
- Cover and refrigerate the mixture for 1–2 hours, until firm.
- Scoop into 1-inch balls using a spoon or melon baller and roll into smooth truffles.
- Roll truffles in cocoa powder, extra nuts, or dip in melted chocolate as desired.
- Chill truffles for 15–30 minutes before serving.
