Description

Chocolate Hazelnut Crunch Truffles are decadent no-bake treats made with smooth chocolate ganache, toasted hazelnuts, and crispy rice cereal for a rich yet crunchy bite-sized indulgence. Ideal for gifting, holidays, or everyday luxury.

Ingredients

Units Scale
  • 8 oz semi-sweet or dark chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/2 cup toasted hazelnuts, finely chopped
  • 1/3 cup crispy rice cereal or crushed wafer cookies
  • 1 tsp vanilla extract (optional)
  • For coating: cocoa powder, extra chopped hazelnuts, or melted chocolate

Instructions

  1. Place chopped chocolate in a heatproof bowl.
  2. In a small saucepan, heat cream and butter over medium heat until just simmering.
  3. Pour the hot cream mixture over the chocolate. Let sit for 1–2 minutes, then stir until smooth and glossy.
  4. Stir in vanilla extract (if using), chopped hazelnuts, and crispy rice cereal.
  5. Cover and refrigerate the mixture for 1–2 hours, until firm.
  6. Scoop into 1-inch balls using a spoon or melon baller and roll into smooth truffles.
  7. Roll truffles in cocoa powder, extra nuts, or dip in melted chocolate as desired.
  8. Chill truffles for 15–30 minutes before serving.

Notes

  • Use milk chocolate for a sweeter flavor profile.
  • Try hazelnut liqueur or espresso powder for depth.
  • Swap hazelnuts for almonds, pecans, or macadamia nuts.
  • Roll in coconut, crushed cookies, or crushed freeze-dried raspberries for variety.
  • Add Nutella for extra hazelnut flavor, but chill well to firm.
