- 1/3 cup cocoa powder

- 2 eggs
- 3/4 cup sugar
- 1/2 cup milk or buttermilk

- 1 tsp vanilla extract
- Green food coloring (optional)
- 1/3 cup pistachio paste or 2 tbsp matcha powder
- 1 cup heavy whipping cream
- 2 tsp gelatin (or agar agar for vegetarian option)
- 100g dark chocolate (for topping or frosting)
- 2 tbsp crushed pistachios or pumpkin seeds (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
- In a bowl, combine flour, cocoa powder, baking powder, and baking soda.
- In a separate bowl, whisk eggs, sugar, milk, oil, and vanilla extract until smooth.
- Gradually add dry ingredients to wet and mix until fully combined.
- Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted comes out clean. Let cool completely.
- Whip the cream until soft peaks form.
- Dissolve gelatin in warm water. Mix it with pistachio paste or matcha and a bit of sugar, then fold into the whipped cream. Add green food coloring if desired.
- Spread mousse over the cooled chocolate cake, smoothing the top. Refrigerate for at least 4 hours to set.
- Once set, pipe chocolate frosting on top and sprinkle with crushed pistachios or pumpkin seeds.
- Slice and serve chilled.
Notes
- Chill the mousse well for the best texture.
- Use agar agar for a vegetarian-friendly version.
- White chocolate can be used instead of dark for a different flavor.
- Make in individual cups for personalized servings.
